Stuffed Mussels Production

after frozen stuffed mussels production midye dolma inner temperature checked

 Live mussels - latin name is Mtylus galloprovincialis -  come  to our facility as raw material from purification centers near aquaculture mussel farms which have approval by Ministry of Agriculture and Forestry. Mussels are  accepted to our production line after the detailed organoleptic tests only. Then a meticulous, sterile and hygienic production process starts in accordance with HACCP standards.

During Frozen Stuffed Mussels Production ,  ( mussels stuffed and cooked with an aromatic blend of rice and spices ) specific steaming rules are conducted based upon Turkish Food Codex Microbiological Criteria Announcement and International Food Standards.  This rule involves the immersion of stuffed mussels in boiling pot for the period required to raise the inner temperature of the stuffed mussels to not less than 90°C and maintenance of this minimum temperature for a period of not less than 90 seconds.

 After waiting for a determined time its cooling,  stuffed mussels are quickly freezed to store with its first day taste via quick-freeze process. Then the stuffed mussels ( Midye Dolma ) are kept stored in our frozen  warehouse for wordwide distribution
